One recipe, two stubborn people, zero fixed address
Scoville is Mari and Teo Valdez, a sister and brother who grew up sneaking spoonfuls from their grandmother Chelo's birria pot in Jalisco. In 2021 they bought a step van older than both of them, painted it the color of dried chiles, and taught it to cross Cortena without stalling. Mostly.
Mari runs the griddle and the salsa rail. Teo runs the consommé, the schedule, and the smoker that lights at 4am. The recipe is Chelo's, unchanged: fourteen hours, no shortcuts, no freezer. The plan was never a restaurant.
